Slice of easy pumpkin dump cake with whipped cream, pumpkins and fall spices

Easy Pumpkin Dump Cake

If you love pumpkin pie but not the work of making a crust, this is your recipe. A pumpkin dump cake gives you the same warm, spiced custard — with a golden, buttery cake topping that you literally sprinkle on. No mixer, no rolling, no fuss. You whisk the pumpkin filling in one bowl, pour it into the dish, scatter dry cake mix over the top, drizzle with butter, and the oven does the rest. Serve it warm with whipped cream and it tastes like fall in a dish. It is also the easiest dessert to take to a family dinner, a school event, or a holiday table — it feeds 12 from one pan.

Why This Recipe Works

  • Pumpkin puree (not pie filling) lets you control the sugar and spice yourself.
  • Evaporated milk makes the custard rich without being heavy like cream.
  • Dry cake mix + melted butter bakes into a crisp, cobbler-like topping — do not stir it in.
  • Resting 15 minutes after baking lets the custard set so slices hold.

Course: Dessert
Cuisine: American

Ingredients

  • 1 can pumpkin puree 29 oz / 822 g — NOT pumpkin pie filling
  • 1 can evaporated milk 12 oz / 354 ml
  • 3 large eggs room temperature
  • 1 cup granulated sugar 200 g
  • 2 tsp pumpkin pie spice + 1/2 tsp ground cinnamon 1/2 tsp salt
  • 1 box yellow cake mix 15.25 oz / 432 g
  • 3/4 cup unsalted butter 170 g, melted
  • 1 cup chopped pecans optional
  • Whipped cream to serve (optional)
  • 1/2 tsp salt

Equipment

  • 9×13-inch baking dish greased

Method

  1. Heat oven to 350°F / 175°C. Grease a 9×13-inch baking dish.
  2. Whisk pumpkin, evaporated milk, eggs, sugar, spices and salt until completely smooth. Pour into the dish.
  3. Sprinkle the DRY cake mix evenly over the top, covering all the pumpkin. Do not stir.
  4. Drizzle melted butter evenly over the cake mix (cover as much dry mix as you can). Scatter pecans if using.
  5. Bake 50–60 minutes, until edges are set, top is golden, and centre only just jiggles.
  6. Rest 15 minutes. Serve warm with whipped cream. Refrigerate leftovers up to 4 days; reheat slices 20 seconds in microwave.

Tips, Substitutions and Storage

  • Dry spots on top? Next time drizzle butter in a grid, or use thin butter slices for full coverage.
  • Spice cake mix instead of yellow = deeper fall flavour, skip the extra cinnamon.
  • No evaporated milk: half-and-half works 1:1; whole milk makes a softer set.
  • Make ahead: bake, cool, refrigerate overnight — flavour improves day 2. Freeze slices up to 2 months.

Pumpkin Dump Cake: Serving Ideas

Serve this pumpkin dump cake warm, straight from the dish, with a big spoonful of whipped cream or a scoop of vanilla ice cream melting over the top. A drizzle of caramel sauce and an extra pinch of cinnamon make it taste like a coffee-shop dessert. For a holiday table, cut it into neat squares once it has rested, and set it out with coffee or hot apple cider — it holds beautifully on a dessert buffet because the custard stays moist for hours. Leftovers reheat in seconds, and a warm slice with our soft Christmas cookies on the side makes the coziest fall dessert plate.

To store leftovers, let the cake cool, cover the dish tightly, and refrigerate for up to four days; the custard firms up and the flavours deepen overnight. Reheat individual slices in the microwave for 20 to 30 seconds, or warm the whole dish, loosely covered with foil, in a low oven until just heated through, so the topping stays crisp rather than soft.

For serving a crowd, set out small bowls of extra whipped cream, chopped toasted pecans, and caramel sauce so everyone can finish their slice their own way. It also freezes well: wrap individual portions tightly, freeze for up to two months, thaw overnight in the fridge, and warm before serving for a dessert that tastes freshly baked. A dusting of powdered sugar just before serving makes even a simple weeknight slice look ready for guests.

Frequently Asked Questions

Can I use pumpkin pie filling instead of puree?

No for this version; pie filling is already sweetened/spiced and the cake will be too sweet and soft. If it’s all you have, cut sugar to 1/4 cup and skip the spice.

Why is my dump cake still wet in the middle?

It needed 5–10 more minutes, or the butter didn’t cover the mix. The centre should jiggle slightly, not slosh.

Does pumpkin dump cake need to be refrigerated?

Yes, after 2 hours at room temperature, because of the egg custard base.

Can I make it in a slow cooker?

Yes: same layering in a greased slow cooker, LOW 3–4 hours, lid with a tea towel under it to catch condensation.
