Pecan Pie Bars — Easy Sliceable Pecan Pie for a Crowd
Pecan pie is the Thanksgiving dessert nobody wants to skip — and the one that causes the most stress, between the crust, the crimping and the wobbly centre. Pecan pie bars keep everything people love about it — the buttery base, the dark, gooey brown-sugar filling, the crackly layer of toasted pecans — and drop everything they don’t. The shortbread base presses straight into the pan with your fingers, the filling pours over it hot from one saucepan, and the whole thing bakes flat and even, then slices into clean bars that travel, stack and serve a crowd without a pie server in sight. Make them a day ahead; they slice better and taste deeper for it.

Why This Recipe Works
- A press-in shortbread base: no rolling, no chilling, no shrinking — the base is par-baked so it stays crisp under the wet filling.
- The filling is a true pecan-pie filling (butter, brown sugar, corn syrup, eggs, vanilla) poured over hot, so it settles level and bakes evenly.
- A high pecan ratio, roughly chopped: the top should be mostly nuts in one crackly layer, not a few pecans floating in syrup.
- A proper cool before slicing: the filling finishes setting as it cools, which is the difference between clean bars and a gooey slide.

Ingredients
Method
- Heat the oven to 350°F / 175°C. Line a 9×13-inch (23×33 cm) pan with parchment, leaving an overhang on the long sides.
- Make the base: stir the flour, sugar and salt together, then mix in the melted butter until it looks like damp sand. Tip into the pan and press firmly and evenly into the base and slightly up the sides.
- Bake the base 18–20 minutes until pale golden at the edges.
- Meanwhile make the filling: melt the butter in a medium saucepan, take off the heat and whisk in the brown sugar and corn syrup until smooth. Whisk in the eggs one at a time, then the vanilla and salt, until glossy.
- Scatter the pecans evenly over the hot base. Pour the filling slowly over the nuts so it settles level, nudging any dry pecans under the surface.
- Bake 28–32 minutes, until the edges are set and the centre has only a slight jiggle when the pan is shaken gently. Do not overbake — the centre firms as it cools.
- Cool completely in the pan (at least 2 hours, or chill for cleaner cuts). Lift out by the parchment and slice into 16 bars with a large sharp knife, wiping the blade between cuts.
Notes
Usually underbaking or slicing warm. The centre should jiggle only slightly in the oven and must cool fully (chilling helps) before slicing. Can I make pecan pie bars ahead of time?
Yes — they are better made a day ahead. Chill uncut and slice before serving. Do pecan pie bars need to be refrigerated?
For storage beyond 2 days, yes, because of the egg filling; bring them back to room temperature before serving. Can I use dark corn syrup or dark brown sugar?
Yes: the bars will be darker and more molasses-flavoured, which many people prefer. Can I halve the recipe?
Yes: use an 8×8-inch (20×20 cm) pan and reduce the bake times slightly (base ~15 minutes, filled ~22–25 minutes), watching the jiggle cue.

For the base
- 2 cups (250 g) all-purpose flour

- 3 large eggs, at room temperature
- 1 tsp vanilla extract
- 1/2 tsp fine salt
- 2 1/2 cups (about 280 g) pecan halves, roughly chopped

Tips & Storage
- Room-temperature eggs matter: cold eggs can make the hot butter mixture seize into flecks; set them out 30 minutes early, or warm them in a bowl of lukewarm water.
- No corn syrup: golden syrup is the closest swap; honey works but tastes stronger and browns faster — check 5 minutes early.
- Bourbon version: replace 1 tbsp of the vanilla measure with bourbon for the classic Kentucky note.
- Salt the top: a tiny pinch of flaky salt on the warm bars makes the caramel flavour read richer.
- Storage: keep in an airtight container at room temperature 2 days, or refrigerate up to a week. Freeze, well wrapped, up to 2 months; thaw at room temperature. For more on keeping pecans fresh, see the UGA Extension guide to storing pecans.
- Make ahead: bake the day before Thanksgiving, chill uncut, and slice on the day — the cleanest bars and one less job.
