Cozy Tomato Soup With Grilled Cheese Croutons

This easy tomato soup recipe puts the grilled cheese right on top of the soup, cut into crisp, golden croutons.

Tomato soup and grilled cheese is the combination nobody outgrows — the only problem is logistics: one hand dunking, one hand holding, the sandwich gone before the soup is half finished. This recipe solves it by putting the grilled cheese ON the soup, cut into golden croutons that stay crisp on top and go soft and cheesy where they meet the tomato.

The soup itself is a one-pot, 35-minute job built on canned tomatoes — the kind that actually taste better than out-of-season fresh ones — blended silky with a splash of cream. It is cozy-night food at its simplest: a pot of soup, a skillet of croutons, and bowls that come back empty. Make a double batch of the soup base and freeze half; the croutons take five minutes whenever you need them.

Why This Tomato Soup Recipe Works

  • Body plus depth, fast. Crushed tomatoes give the soup body, and tomato paste browned for 2 minutes in the butter adds a deep, slow-cooked flavour in minutes.
  • Acidity, tamed. A pinch of sugar and a pinch of baking soda take the sharp edge off the tomatoes without making the soup taste sweet.
  • Silky, not split. The soup is blended completely smooth first, and the cream goes in off the boil, so the texture stays velvety.
  • Maximum crisp edges. The croutons are cut small and butter-toasted on both sides, so they hold up on top of the soup instead of sinking.

Tomato Soup Ingredients

For the soup

  • 2 Tbsp unsalted butter (or olive oil)
  • 1 medium yellow onion, diced (about 1 1/2 cups / 200 g)
  • 3 cloves garlic, minced
  • 2 Tbsp tomato paste
  • 2 × 14.5 oz (400 g) cans crushed tomatoes (or one 28 oz / 800 g can)
  • 2 cups (480 ml) vegetable or chicken stock
  • 1 tsp granulated sugar
  • 1/4 tsp baking soda (optional)
  • 3/4 tsp fine salt, plus black pepper to taste
  • 1/2 cup (120 ml) heavy cream, plus more to swirl
  • Fresh basil, to serve (optional)

For the grilled cheese croutons

  • 4 slices sturdy white or sourdough bread
  • 4 oz (115 g) cheddar or American cheese, sliced or grated
  • 1–2 Tbsp softened butter

How to Make This Tomato Soup Recipe

  1. Melt the butter in a large pot over medium heat. Cook the onion for 5–6 minutes until soft, then add the garlic for 30 seconds.
  2. Stir in the tomato paste and cook for about 2 minutes until it darkens slightly — do not skip this step.
  3. Add the crushed tomatoes, stock, sugar, baking soda, salt and pepper. Simmer gently for 15 minutes.
  4. Meanwhile, make the croutons: butter the outsides of two cheese sandwiches and toast in a skillet for 2–3 minutes per side until golden and melted. Rest for 1 minute, then cut into 1-inch cubes.
  5. Blend the soup completely smooth with an immersion blender, or in batches in a counter blender with the lid vented.
  6. Return to low heat, stir in the cream, and warm through without boiling. Adjust the seasoning.
  7. Ladle into bowls, add a swirl of cream, pile the warm croutons on top, and serve immediately.

Tips for the Best Tomato Soup

Make it dairy-free: swap the butter for olive oil, the cream for coconut milk or cashew cream, and use a dairy-free cheese for the croutons. The soup stays rich and silky.

No blender? The soup will be rustic rather than silky — still delicious, just with more texture. A potato masher in the pot breaks it down part of the way.

Storage and freezing: the soup base (before the cream) freezes well for up to 3 months and keeps 4 days in the fridge. Always make the croutons fresh — they take five minutes and are at their best straight from the skillet.

Add a little heat: stir red pepper flakes in with the garlic, or finish with a pinch of smoked paprika for a gently smoky bowl.

Tomato Soup Recipe FAQs

Can I use fresh tomatoes for this tomato soup recipe?

You can, but canned tomatoes are better for most of the year. Fresh tomatoes need to be very ripe — about 3 lb (1.4 kg), peeled — and the soup will be thinner than the canned version.

Why add baking soda and sugar to tomato soup?

Both tame the natural acidity of the tomatoes. Used in pinches, they make the soup taste rich and rounded, not sweet.

Can I make this tomato soup recipe in a slow cooker?

Yes — add everything except the cream and cook on LOW for 4–6 hours, then blend, stir in the cream at the end, and make the croutons fresh. Follow the USDA guidance on slow cookers and food safety for safe temperatures and timings.

How do I keep the croutons from going soggy?

Toast them deeply golden on both sides, keep them chunky at about 1 inch, and add them at the table, right on top of the soup, rather than stirring them in.

What is the best cheese for the croutons?

Sharp cheddar brings the flavour and American cheese brings the smooth melt — a mix of the two is ideal.
