Ingredients

  • 1 1/2 lb 680 g baby potatoes, halved (quarter any large ones)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked or sweet paprika
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/3 cup 30 g finely grated parmesan, divided
  • 1 tbsp chopped fresh parsley optional, to garnish
  • Optional: a squeeze of lemon juice over the finished potatoes

Method

  1. Prep the potatoes: wash, pat very dry with a clean towel, and halve them (quarter the big ones).
  2. Season: toss with the olive oil, then sprinkle over the garlic powder, Italian seasoning, paprika, salt and pepper plus HALF of the parmesan; toss again.
  3. Arrange in the air fryer basket in a single layer, cut-side down, with a little space between pieces; cook in two batches rather than stacking.
  4. Air fry at 400°F (200°C) for 18–20 minutes, shaking the basket or flipping halfway, until the edges are deep golden and a fork slides easily into the largest piece.
  5. Finish: tip into a serving bowl and immediately scatter over the remaining parmesan and the parsley, plus a squeeze of lemon if you like; serve straight away.
