Make-Ahead Dinner Rolls

Make-ahead dinner rolls that are soft, fluffy and freezer-friendly — shape them days early and bake fresh, warm rolls right before the meal.
Prep Time 25 minutes
Cook Time 16 minutes
Total Time 41 minutes
Servings: 12 rolls
Course: Side Dish
Cuisine: American

Ingredients

  • 1 cup warm whole milk (about 110°F / 43°C) 240 ml
  • 2 1/4 tsp instant yeast (1 packet) 7 g
  • 3 tbsp granulated sugar 40 g
  • 4 tbsp unsalted butter, melted, plus more for brushing 55 g
  • 1 large egg at room temperature
  • 3 1/2 cups all-purpose flour, plus more as needed 440 g
  • 1 tsp fine salt

Method

  1. Stir the warm milk, yeast and sugar together in a large bowl and leave 5 minutes until foamy.
  2. Whisk in the melted butter and egg. Add the flour and salt and mix to a shaggy dough.
  3. Knead 8–10 minutes by hand (or 6–7 in a stand mixer) until smooth and elastic, adding a spoonful of flour only if the dough sticks stubbornly — it should stay soft and slightly tacky.
  4. Cover and let rise in a warm spot 1–1 1/2 hours, until doubled.
  5. Divide into 12 equal pieces, roll each into a smooth ball and arrange in a greased 9x13-inch (23x33 cm) pan. CHOOSE YOUR ROUTE: (a) Bake today — cover and proof 30–45 minutes until puffy, then bake as step 6. (b) Fridge overnight — cover tightly and refrigerate up to 24 hours; next day proof at room temperature 45–60 minutes until puffy, then bake. (c) Freeze — freeze the shaped pan until solid, transfer rolls to a freezer bag up to 1 month; to bake, arrange in the pan, thaw and proof at room temperature 3–4 hours until puffy and doubled, then bake.
  6. Heat the oven to 375°F / 190°C. Bake 15–18 minutes until deep golden on top.
  7. Brush the hot rolls with melted butter and serve warm.

Notes

How far ahead can I make dinner rolls?
Shaped rolls keep 24 hours in the fridge or up to 1 month in the freezer before baking; baked rolls keep 2 days sealed, or a month frozen.
Why did my make-ahead rolls not rise?
Usually they went into the oven before finishing their post-chill proof. Give them time to get visibly puffy and doubled at room temperature first.
Can I freeze baked rolls instead of dough?
Yes: cool fully, bag and freeze up to a month; thaw and refresh 5–8 minutes in a moderate oven.
What size pan if I halve the recipe?
Six rolls fit an 8x8-inch (20x20 cm) pan; bake time is about the same, watching for deep golden tops.
Can I make these without a mixer?
Yes — the dough is soft and kneads easily by hand in 8–10 minutes on a lightly floured surface.
